Sheet-Pan Sausage, Potatoes & Green Beans
Smoked sausage, crispy potatoes and green beans roasted together on one sheet pan. Minimal prep, minimal dishes.

Why it's a good deal
Sheet-pan dinners are a budget cook's best friend: a little sausage goes a long way when it's roasted with plenty of potatoes and vegetables, and you only wash one pan. Cutting the potatoes small is the key to getting everything done at the same time.
Instructions
- Heat the oven to 425°F and line a large rimmed sheet pan with foil or parchment for easy cleanup.
- Toss the potatoes with 2 tbsp oil and half the seasonings on the pan. Spread out in a single layer and roast for 15 minutes.
- Meanwhile, toss the green beans and sausage with the remaining oil and seasonings.
- Stir the potatoes, add the sausage and green beans to the pan, and roast for another 15 minutes until the potatoes are golden and tender and the sausage is browned.
- Finish with Parmesan or lemon if you like, and serve straight from the pan.

- Use whatever sausage is on sale — turkey, chicken or pork all work.
- Frozen green beans are often cheaper than fresh and need no trimming.
- Swap the green beans for broccoli, carrots or bell peppers depending on what's in season.
