Lentil Sloppy Joes
A thrifty, plant-based twist on sloppy joes made with lentils in a tangy tomato sauce. Ready in 30 minutes.

Why it's a good deal
Dry lentils are one of the most affordable proteins in the grocery store and don't need soaking. Simmered in a classic sloppy joe sauce, they give you the same messy, saucy sandwich at a fraction of the cost.
Instructions
- Heat the oil in a large skillet over medium heat. Cook the onion and bell pepper for 5 minutes until softened, then add the garlic for 30 seconds.
- Add the lentils and water or broth. Bring to a boil, then reduce the heat, cover and simmer for 18–20 minutes until the lentils are tender and most of the liquid is absorbed.
- Stir in the tomato sauce, ketchup, brown sugar, mustard, Worcestershire and chili powder. Simmer uncovered for 5 minutes until thick.
- Season with salt and pepper, and spoon onto toasted buns.

- A 1-lb bag of dry lentils is enough for two batches of this recipe.
- Use any onion and pepper you have on hand — frozen diced peppers work fine.

- Leftover filling is great over rice or baked potatoes.
